Bulalo is one of the top best stew in Philippines. A light colored soup that is made from beef shanks and marrow bones and is boiled for a long hours so the ligament and meat will just fall apart while eating it. The marrow makes the bulalo special and famous because people really like to taste and eat it. This dish is commonly served at evenings or during dinner and cold weather, also it is famous after having a night out and helps to make you sober which other people say. Bulalo is native to the Southern Luzon region and is popular in the whole Philippines.

Kare-kare is a Philippine stew with a rich and delicious thick peanut sauce. It is a popular dish that is usually served  during occasions. It is made from a variation base of stewed oxtail, beef stew meat and occasionally offal or tripe. Beef is simmered for hours for the desired tenderness together with variety of vegetables such as long beans, egg plant and banana heart.

Kaldereta has several types and I choose Kalderetang Kambing (Goat Stew) it is a Goat meat stewed in tomato sauce. Adult goat meat (Chevon) is commonly used for this dish. It is stewed in a tomato sauce and sauteed with garlic, onions and tomatoes until is gets tender. Preparing goat meat is different compared to beef. Goat meat is gamy and to eliminate its gamy flavor and odor is to marinate it in vinegar, salt and ground black pepper for about 1 to 2 hours. Kalderta is one of my favorite Filipino dish and is usually served in occasion, but you can  try this and serve it to you family or friends.

Kinilaw na Isda is a Filipino raw seafood dish that is similar to Ceviche. Its Cooking process relies to vinegar to denature with a variety of spices. This is commonly served as appetizer or pulutan (food or snack as accompaniment to alcoholic drinks). This dish is easy to prepare and is always served when there is an outing or an unplanned get together .
